Mediterranean Plate
The Byron Bay Medi Plate I Can't Stop Making at Home
I first had this at Highlife in Byron Bay, one of my all time favourite cafes called Highlife. I can't always be in Byron & there is no where to find this in Perth...So I figured out how to make it myself :)
Ingredients
- 2 slices Venerdi seeded bread, toasted
- 2 pasture raised eggs
- Avocado, smashed
- Baba ganoush
- Sauerkraut
- Pickled red onion
- Marinated red capsicum
- 1/3 of a zucchini
- Fresh dill
- Hemp seeds
- HTK OG crunch
- Lemon to finish
How to Build It
Spread the baba ganoush as your base. Layer the sauerkraut, roast the capsicum in a little bit of coconut oil & paprika along with some chopped zucchini. Add the pickled onion on top. Add your toast with smashed avo, fried eggs alongside. Finish with hemp seeds, OG crunch, loads of dill and a big squeeze of lemon.
The Brands I Use
For the kraut I use Gagas Gut Loving or Spoonful of Goodness which is full of live cultures, not the shelf-stable stuff. Good Grocer baba ganoush is clean and delicious. Venerdi seeded bread is the only one I'll buy. Farmers market pasture raised eggs, always.
The One Thing I Always Add
HTK OG crunch + hemp seeds goes on this every single time. The texture and flavour is what makes it:)
