Ingredients (Serves 2 + leftovers)

  • 500g extra lean grass-fed beef mince
  • 1 stalk lemongrass, finely sliced
  • 1 tsp garlic (minced)
  • 1 tsp Nutra Organics Bone Broth Concentrate
  • 2 tbsp gluten-free soy sauce or tamari
  • 1 tbsp rice wine vinegar
  • Juice of 1 lime
  • 1 small bunch fresh basil
  • 3 spring onions, sliced
  • ½ cup dry roasted cashews, roughly chopped
  • 1-2 tsp chopped chilli (optional but recommended)
  • Toasted sesame seeds

For the crispy cups:

  • 4 sheets rice paper, cut into quarters
  • Coconut oil (for shallow frying)

Method

1. Make the crispy rice paper cups

Heat coconut oil in a pan over medium-high heat.

Add the rice paper pieces one at a time
they will puff up very quickly (like seconds, don’t blink or they’ll burn)

Remove immediately and place on paper towel to drain.

Set aside.


2. Cook the beef

In the same pan, add the beef mince and cook until browned.

Add:

  • Lemongrass
  • Garlic
  • Bone broth concentrate

Cook for a few more minutes until fragrant.


3. Build the flavour

Add:

  • Tamari (or GF soy)
  • Rice wine vinegar

Stir through.

Then finish with:

  • Fresh basil
  • Spring onions
  • Lime juice
  • Chilli

Give it a final toss until everything is glossy and smelling unreal.


4. Assemble

Spoon the beef into your crispy rice paper cups.

Top with:

  • Crushed cashews
  • Extra sesame seeds
  • Optional pickled onions
  • Extra squeeze of lime
