🥩 Crunchy Miso Steak Bowl (with OG Crunch Magic)

This low-carb bowl is here to fuel your glow-up. Loaded with good fats, greens, ferments and that iconic OG Crunch, it’s the kinda meal that tastes indulgent but totally backs your gut health goals. Perfect for lunch, dinner, or anytime you're craving that clean-but-satisfying vibe.
Ingredients (Serves 1)
- 1 heaped cup kale slaw mix
- 30g pickled cabbage
- 1 tbsp Hail the Kale Kraut
- 1/2 avocado, sliced
- 200g grass-fed steak (we love fillet steak from our pals at DCF)
- 1/2 cup broccoli florets
- 1 tsp coconut oil
- 1/4 tsp garlic powder
- 2 tbsp Hail the Kale Miso Dressing - 50ml
- 1 tbsp apple cider vinegar (for massaging the slaw)
- Generous handful of Hail the Kale OG Crunch (20g)

Tamari & cracked black pepper (for the steak)
Method

Marinate the steak: Toss your steak with a splash of tamari and a good grind of cracked black pepper. Let it chill for a few while you prep the rest.

Massage the slaw: In a bowl, mix the kale slaw with 1 tbsp of ACV. Use your hands to massage it for 1-2 mins until it softens a little (and becomes way more delicious).

Cook the broccoli: Heat coconut oil in a pan and sauté the broccoli with garlic powder until just tender but still a little crisp. (Alternatively, air fry or roast it if you’re feelin’ lazy.)

Air fry the steak: Pop your steak in the air fryer at 200°C (about 390°F) for 6–8 minutes, depending on how you like it. Rest for a few minutes, then slice thinly.

Assemble the bowl: Start with the slaw base, then layer on your kraut, pickled cabbage, avocado, sautéed broccoli, and juicy steak slices.
