Smoky Tofu Tostadas w/ Chilli Mango Salsa
500g block of firm tofu
1 large mango
½ cucumber
½ red onion thinly diced
2 red capsicums
1 red chilli
½ head red cabbage
Apple cider vinegar
1 avocado
Juice of one lime
8 pack of GF La Tortilla GF Tortillas
100g of grilled corn
1 bottle of Holy Moly Smoky Aioli
HOW TO:
Slice the red cabbage and add it into a bowl with apple cider vinegar and salt. Let this sit for at least 1 hour to pickle and soften the cabbage. Slice the mango, cucumber, red onion, capsicum, chilli + lime juice. Slice tofu in half so it is half the thickness. Heat a try pan and add coconut oil spray and sear tofu on each side until brown and crispy. Heat tortillas in a pan until warm. To make guacamole add avocado, lime juice and salt and stir until combined & creamy. Add the red cabbage to the tostadas. Top with mango salsa, tofu, guac and corn, Add smoky aioli - enjoy!
