Charred Veg + Smoked Chicken Bowl
The 15-Min Glow Bowl I’m Making on Repeat
This is one of those meals that feels fancy but takes about 15 minutes. It’s warm, crunchy, creamy, tangy, and super satisfying.
I call it my Charred Veg + Smoked Chicken Glow Bowl.
Ingredients (serves 1)
Protein

Smoked chicken breast (any smoked chicken works)
Vegetables

Eggplant
-
Zucchini
-
Red onion
-
Broccolini
Toppings
-
Avocado
-
Pickled kraut
-
Crispy chilli hummus
-
Our OG crunch or GF crackers for texture
Cooking

Olive oil or coconut oil spray
How to make it
1. Prep the vegetables
Slice the eggplant, zucchini and red onion. Trim the broccolini. Spray lightly with olive oil or coconut oil.
2. Char the veg
Cook the vegetables on a BBQ or a hot grill pan until they’re charred and tender.
3. Build the base
Add the charred vegetables to a bowl. Slice the smoked chicken and place it over the top.
4. Add the toppings
Top with avocado, a generous spoon of crispy chilli hummus and a little kraut.
5. Add crunch
Add our OG crunch or miso bites OR crumble a gluten-free cracker over the bowl.
6. Finish with dressing
Drizzle with miso dressing and eat immediately.
